Brewing coffee is a lot like blackjack. It’s a gamble. Just like a good gambler knows how to play the odds a good brewer knows how to play the odds. A good brewer knows that about 30% of the coffee beans total weight is extractable by water. He’ll also know that two thirds taste really great, and that last third tastes really rotten. So the question is how far are you willing to go? Because if you extract just enough flavor you will get a great tasting cup but if you go too far you’re busted. But as long as you are aware of the four different functions you will always have a good cup of coffee; grind size, temperature and quality of the water, the proportion of water too coffee and brew time. Grind size depends on the brewing method you choose to use.
Filter drip and Vacuum requires a finely ground bean. Filter drip is the most common method, probably because of the ease of use. French drip and French press goes best with a medium ground bean. The medium ground bean is the most popular in the USA today. Espresso needs a very finely ground bean. This is also used for Americano style coffee, which really is an espresso with hot water poured over it.
Water. You need a good quality water. It can not be stressed enough. Use cold water, and preferably quality bottled water. Never let the water boil. The ideal temperature is just below boiling. The Asuka coffee machines bring the water temperature to a perfect 94 degrees Celsius for the best flavor.
Proportion of water to coffee. 175 ml of water requires 2 tablespoons of ground coffee. More if you like a stronger coffee. Never less. This really brings out the best of any coffee and you will fully experience the flavor, aroma, acidity and body.
Brew time. It really depends on the method you use. In our opinion the best coffee is from our espresso machines. The brew time is exactly the same everytime so you can be sure that your coffee is exactly the way you want every time. No suprises.
